These prawns make great finger food starters. The marinade is all important as it is what takes them from buffet to banquet. The short fry means they stay moist and full of explosive flavour.


  • 4 king prawns/jumbo shrimp, about 200 g/7 oz in total, or 8 med


  1. Shell the prawns and remove the heads, leaving the tails on. Devein the prawns by slicing all the way down the back, but not through, then open them out and wash out the black intestine. Open the prawns out further by slicing into each side of the flesh and unfolding them outwards to make large ovals with the tail at one end. Put the prawns in a dish.
