I love to play with paneer. It’s the simplest form of cheese making and it’s something parents and children can do together – it has all the bonding of baking and the great charm of playing with plasticine. I often add chopped fresh herbs into the paneer to conjure up different flavours. It has that squeaky, halloumi bite when it has been properly made, but sometimes I eat it with lemon juice and herbs as a soft cheese when it has not been fully compressed.
