The Portuguese occupation had an enormous influence on Goan cuisine. In their wake, they left a trail of subversive ingredient twists, the addition of alcohol and vinegars among them. The splash of sweet sherry here adds a Mowgli sass that I love.

Ingredients

  • 1 large halibut fillet, about 800 g/1 lb 12 oz

Method

  1. Preheat the oven to 180°C/350°F/gas 4. Wash the halibut fillet and pat dry. Use whole or, depending on the size of your oven and your dish, cut in half. Sprinkle with the lemon juice and salt to taste. Make a paste in the blender with the ginger, chopped garlic
