These crunchy, fine, little noodles are the backbone of any chat dish and are fiendishly difficult to make. You will need a sev noodle maker if you want to attempt it. Most Indians buy them. They are made from gram flour – ground chickpeas/garbanzo beans – so are gluten free and wonderfully nutty in flavour. You can omit the chilli powder if you want a mild sev that has much less to say for itself. The very fine noodles are called ‘nylon’ sev; a charming endorsement of all things ’40s.
