This is the rice that my family have made for over a hundred years. This combination of black cardamom and fried cumin seeds produce a multi-layered aroma to the basmati rice, which makes it so delicious that it is a dish in itself. You need to use basmati – it is as white as snow and has a hint of musk that weaves wonderful magic with the black cardamom.
