Carrots in an Indian street market are unrecognisable from their Western cousins. They are often deep red and are as sweet as fruit. For this reason, carrots feature more in salads and desserts than in curry. Never the bridesmaid, always the bride.

Ingredients

  • 5 large carrots, peeled and grated
  • 1 small bunch of fresh coriander/cilantro, leaves and stalks roughly chopped, plus extra to garnish

Method

  1. In a large bowl mix all of the ingredients well and let stand for 10 minutes to allow the carrots to release their natural flavour. Mix again just before serving and garnish with a little fresh coriander.
