This is so different to the pickles you find on the curry house carousel. This has a fresh, multi-layered fragrance. The mango must be the raw green sort, which are the miserable little green blighters you find in damp cardboard boxes in Asian grocery stores. They are how Indians bring sharpness to their dishes – they have rather the same role as lemons in the West.
