Yogurt is a most beloved ingredient in India. We often have a bowl of yogurt on the side of our dinner plates to cool and to reset the palate. This sweetened version is the yogurt we use in chat dishes. It brings sweetness and acts as an emollient for all the other singing, dancing, crunching elements.

Ingredients

  • ½ tbsp cumin seeds
  • 250 g/9 oz/1

Method

  1. In a small frying pan set over a medium heat, toast the cumin seeds for 1 minute until they release their aroma.
  2. Grind the toasted cumin seeds in a pestle and mortar.
  3. In a bowl mix together the yogurt, sugar, chat masala, salt and ground cumin seeds. Store in the refrigerator for up to 1 week.
