Salad dressings in India are usually a squeeze of lemon, a pinch of salt and perhaps chat masala. This is my home-grown salad dressing. I’m not always a fan of desserts, but I have a sweet savoury tooth. Hence you will see that I add the toffee joy of date molasses to many of my basic dressings. You can leave it out if, like Maa, you hate that sweet edge in your main course.
