This is a chocolate cake with a warm, spiced twist. I have added cardamom, cloves and nutmeg, but I did toy with cinnamon for a while. Many people struggle with cinnamon and so in a restaurant I thought it would be too divisive. Please play with your own spice balance. This is just an indicator recipe.


  • 200 g/7 oz dark/bittersweet chocolate, at least 70% cocoa solids
