The pink Himalayan salt contains minerals that give this ice cream a pretty pink glow but this is lost in the cooking, so the ice cream has a gentle latte look. We don’t believe in food colouring in Mowgli, so the pink stays in name alone.


  • 250 ml/9 fl oz/1 cup double/heavy cream


  1. Gently heat the cream in a saucepan set over a low heat, then set aside.
  2. In a large saucepan set over a medium heat add the caster sugar and cook until the edges begin to melt. Using a metal spoon, gently stir the sugar until it is fully dissolved. Continue to cook for 2–4 minutes. The sugar will get darker and darker as it cooks – you want it to turn a deep da
