Try to get hold of Alphonso or Kesar mangoes for this lassi to taste really authentic. With the big, shop-bought mangoes of the West you get a very different, though still lovely drink. Mango lassi is the drink of choice of most of our Indian clients. I make it with soy milk and low-fat yogurt to keep it light and leave more room for food.

  • 200 g/7 oz very ripe mango
  • 2 tbsp plain yogurt
  • 2 tbsp soy milk
  • juice of ½ lime
  • tsp salt

  1. Peel the mango by cutting away the fatter sides from the stone/pit, then carefully cut crosses into the flesh and turn inside out so the cubes of mango are sticking out. Use a tablespoon to scoop the mango out and into a blender.
  2. Add the yogurt, soy milk, lime juice and salt and blend until smooth. Add a little water to thin down to your taste if necessary.
