This is the closest you will get to the very basic sweetened, sharpened, salted yogurt drink from the streets of India. This drink takes me back to my childhood visits to the lassi capital, Varanasi – hot, bustling dust punctuated with this soothing, refreshing ambrosia.


  • 2 tbsp pineapple juice
  • tsp agave syrup
  • ¼ bird’s-eye


  1. Put all the ingredients into a blender and blend until smooth. Add a little water to thin down to your taste if necessary.
