This drink has its roots in the homes and streets of India. It is very normal for us to add spices to our tea to give flavour and, we believe, a little medicinal value. Tea in India is usually very milky and sweet and this balances the spices. It has all the hit of a spiced rice pudding, but in the form of a bracing brew. I use almond milk in this recipe to make it lighter, but feel free to use full-cream/whole cows’ milk, which is heavier, but more authentic.
