I always wanted a gin and tonic for Mowgli that spoke of coriander/cilantro. I love the sheer taste of green in this cocktail. It’s one of our big sellers and feels like a summer’s day with the windows flung open onto verdant meadows.

Ingredients

  • 2 cm/¾ inch piece of fresh root ginger, peeled and sliced
  • 2 fresh coriander/cilantro stalks

Method

  1. In a cocktail shaker, muddle the fresh root ginger and coriander stalks – this helps to bring their flavours out.
  2. Add the gin, lime juice and gomme, then fill the cocktail shaker with ice cubes and shake vigorously for 6 seconds.
  3. Fill a collins glass to the top with crushed ice, then strain the cocktail into the glass, adding enough tonic to suit your
