I got the idea for this blend of ingredients from a jam I picked up at a farmers’ market. I found it so sweet that I couldn’t taste the rose. It was overpowered. I thought gin would be a good sharpening breakwater between sweetness and fragrance. It works so well. Each flavour flows through in waves. Simple and superb.

Method

  1. Put the gin, purée, gomme, lime juice, rosewater and ice cubes into a cocktail shaker and shake vigorously for 6 seconds.
  2. Fill a collins glass with ice, then strain the cocktail into the glass and top up with tonic.
  3. Finish by garnishing with a fresh raspberry and a pinch of dried rose petals.
