The green cardamom extract really captures the essence of the Indian dessert kitchen. Green, not black, cardamom is the spice of the sweet meats. Hence it works so well in our gomme-infused cocktails
Put the green cardamom pods and tea bags in a small mixing bowl, then cover with boiling water and mix with a spoon. Leave to stand for 5 minutes, then top up with more boiling water until you have 1litre/35fl oz/4¼cups of water in the bowl.
Cover and leave to steep for 12 hours, then strain and store in an airtight container for up to a month.
