All the joy of bread with none of the hassle, flatbreads are an excellent quick fix when you need something fancy in a hurry. They are also great for an open sandwich or light lunch. Our springtime friends the morels are a perfect shape for flatbreads, producing a pleasing flower shape if sliced horizontally. The tiny cultivated shimeji add a sweet-flavoured touch to the earthy morel, and a simple homemade garlic oil – just crush the garlic and add it to the oil – makes for a tasty treat. A
