Again, putting Asian mushrooms in familiar surroundings, here we have a refreshing som tum, based on the traditional hot, sweet and sour Thai salad. The fresh and fragrant Thai flavours, lime, palm sugar and papaya, mix beautifully with the naturally sweet and crunchy, lightly blanched brown and white shimeji mushrooms. And the long, thin, but strong enoki act as a low-carb replacement for noodles – the clever little things.
