This mushroom tempura is light, fluffy and wonderfully umami in taste – and such a great way to cook this crazy, coral-lookalike mushroom. If you can get your hands on a cauliflower mushroom it is a real treat, but it’s rare, so do use other mushrooms in this recipe. Shiitake takes on both a wonderful texture and taste, and puffball sticks are perfectly squidgy inside. Mixed mushrooms can create a guessing game, for guests to discover the different mushrooms for themselves.
