Seasonal late-autumn to early winter mushrooms, such as trompettes, pied de mouton and chanterelles, are a great natural pairing for most game, and partridge is no exception. The bird’s subtle rich flavours complement the forest-like taste of these three mushrooms, with mousserons coming along to add a stronger morsel every other bite. The black pudding dumplings also add a hit of meaty flavour, accentuated with the thyme and orange, in this comforting winter warmer.
