Making the most of the amazing flavour that comes out of dried mushrooms when they are hydrated, this mushroom and Brie cheese soufflé is full of strong, earthy flavours with a delicate, light texture. Serve immediately to achieve the best results, although soufflés will always deflate on the walk to the dinner table. The good news is, they taste great either way!
