The pied de mouton mushroom is a sturdy fellow and a great addition to any stew. Soaking up its surrounding flavours, yet still keeping its umami taste and bulky stature, the little ‘mutton’s foot’ can hold its own with the biggest of flavours. So we thought teaming it up with its namesake just for one recipe was too cute an opportunity to miss. We’ve also added some yellow chanterelles to make it pretty and a whole host of different types of beans to fill you up on a cold winter’s day.
