There is a type of foraged wild mushroom commonly called Berkeley, and perhaps that’s where this strongly flavored sauce gets its name. A mix of mushrooms pairs well here. If using button mushrooms as a substitute, you won’t get much of a mushroom flavor because the red wine and Dijon mustard will dominate. Ideal with venison or roast pork, the sauce can also be spooned over milder meats like grilled chicken.
