Aubergine Dip

As soon as my mother covered the stovetop with foil, I knew we were in for a treat. She had begun the prep for her roasted aubergine/eggplant dip. Slowly our home would fill with the smoky smell of burnt aubergine skin and soon after we would enjoy its heavenly taste and soft meaty texture. Aubergine dip is vastly popular throughout the Middle East, with slightly different names and variations.
