This vibrant onion pickle is a great addition to most dips, a delicious complement to meaty grills, kebabs and fish, and a punchy addition to salads. The vinegar and lemon juice combined with the sumac turn the onions into a striking deep pink, so it not only tastes great, but also looks the part!
First, sterilize the jar you want to use.
In a medium bowl, mix the vinegar, salt, sugar and boiling water until the sugar and salt completely dissolve.
Add the lemon juice, sumac and pink peppercorns.
Place the sliced onion in the sterilized jar and pour the pickling liquid on top until the onions are completely covered. Leave to cool.
