Middle Eastern dressings for salads are a mixture of olive oil and lemon juice or vinegar (preferably wine vinegar), used in much the same proportions as in the French vinaigrette sauce. Crushed garlic is often added with the salt and pepper. Sometimes, too, lemon dressings are sharper than in the West; more lemon is used in proportion to the oil. Occasionally, the Middle Eastern cook uses as much lemon as oil, or more, for instance in dressing dried vegetable salads.
