  • 750 g ( lb) firm tomatoes, sliced

Method

It is not necessary to skin the tomatoes. Spring onions will do beautifully instead of an onion when they are in season.

Mix the tomatoes, onion, parsley, and cumin if used, in a bowl. Mix the dressing, pour it over the vegetables, and toss well. Or arrange the tomatoes in overlapping rows on a serving dish. Pour the mixed dressing over them, and sprinkle with t
