This delightful Egyptian salad is usually made with salty Greek cream cheese, either Teleme or Feta. For an authentic salad, these can be found in most Greek stores, but good-quality cottage or curd cheese makes a good substitute.

Method

Crumble the cheese with a tablespoon of water, using a fork, and work in the lemon juice and olive oil. Mix in the onion and cucumber, and season with salt and pepper (Feta does not need salt).
