Although shami means Syrian, this is an Egyptian salad, characterized by its definite taste of lemon and garlic. It is more like a chicken jelly than a salad.

Ingredients

  • 600 ml (1 pint) chicken stock
  • 1 tablespoon oil

Method

Prepare a well-flavoured chicken stock.

Heat the oil in a saucepan and fry the crushed garlic until it turns golden and aromatic. Pour in a ladleful of the stock. Dissolve the ground rice in a little cold water and mix it with the garlic-flavoured stock.
