Ingredients

  • 750 g ( lb) green beans
  • 1 large onion, coarsely chopped

Method

Top and tail, string and wash the beans and cut into 2 or 3 pieces. Fry the onion and garlic gently until they begin to colour. Add the beans and sauté briefly, stirring constantly. Cover with water, add salt and pepper and simmer until tender and the water is reduced. Add the tomatoes and stir gently until they have softened.
