Ingredients

  • 250 g (8 oz) ground almonds
  • Pinch of caster sugar

Method

Put the ground almonds in a bowl. Add sugar and a very little salt and white pepper. Add garlic. Stir in the lemon juice and oil alternately, a little at a time, beating well with a fork. Pour into a serving bowl. Sprinkle the top with more oil and the parsley, and garnish with slivered or flaked almonds.
