At a banquet given by the Caliph Mustakfi of Baghdad in the tenth century, a member of the company recited a poem by Ishāq ibn Ibrāhīm of Mosul describing sanbūsaj (sanbusak) as follows.

Method

Here is a modern recipe for sanbusak, popular in Syria, the Lebanon and Egypt. The recipe for the dough has for centuries been explained as ‘one coffee cup of oil, one coffee cup of melted butter, one coffee cup of warm water
