  • 500 g (1 lb) cheese, grated
  • 2 eggs, beaten
  • White


Use Greek Halumi, Gruyère, Cheddar, Wensleydale, Edam, Gouda or a mixture of any of these with a little Parmesan; try also Italian Mozzarella. Mix the grated cheese with beaten eggs and season to taste with pepper.
