Trim stems of fresh spinach. Wash, drain and chop finely. If using frozen spinach, de-frost it and make sure that the water drains away entirely. Simmer the spinach in its own juice with a little butter until soft. Season to taste with salt and pepper.

Clean, wash and simmer the brains in acidulated water as described in the recipe for brain filling above. Mash with a fork and mix with
