The most delightful börek are made with flaky or puff pastry. One recipe is similar to the French pâte feuilletée. It requires much time and application, but the results are extremely good and worth the trouble.
One condition necessary for the pastry to be successful is that the ingredients, your hands, bowl and any working surface should be kept cold throughout the preparation. So this precludes attempting the pastry in hot weather unless a cooling fan is available.</
