Another traditional Greek cheese pie made with Feta, the white Greek cheese available from most Greek stores. If you cannot find it, substitute your favourite English cheese.

For 8 to 10 sheets of fila pastry, prepare the following filling:

  • 500 g (1 lb) Feta cheese
  • 2 eggs
  • White pepper

Crumble and mash the cheese with a fork. Beat in the eggs, and season to taste with pepper. Stir in herbs and mix well.

Prepare the pie as in either version of the recipe for spanakopitta above. It is also excellent made with flaky pastry.
