A brilliant dish – an Arab type of pizza with a meat filling. Delicious, dainty, elegant to serve at a party, these savouries are very easy to prepare with a simple bread dough.

A few years ago, my brother met a well-known ex-restaurateur from Alexandria in a cinema queue in Paris. He brought back from this encounter detailed instructions on how to make lahma bi ajeen – to our unanimous delight. My mother has made them on numerous occasions since, usually in large quantities.
