Melokhia is one of Egypt’s national dishes. It is an ancient peasant soup, the making of which is believed to be portrayed in Pharaonic tomb paintings. The medieval melokhia seems to have been a little richer, incorporating fried minced meat and chicken balls. Today, only a few families add these.
