Not to be confused with the fiery Moroccan harissa preserve; this ancestral soup with the consistency of porridge symbolizes the diet of the mountain Kurds. It is back in fashion in Iraq, in the region north of Baghdad, as a breakfast dish. Those who cannot afford meat make it with wheat alone. The name means ‘well cooked’. In Syria and Lebanon it is traditionally served on Assumption Day, Id es Saidi, or when a sheep is slaughtered for
