Method

Crush the garlic cloves with salt. Melt the butter in a large frying pan, or use two smaller ones. Add the garlic and lemon or sumac. As the garlic begins to colour, slide in the eggs, previously broken into a bowl, and continue to fry gently. Rub some dried mint in the palm of your hand, letting it sprinkle over the eggs.
