Eggs with Tomatoes

Soften the chopped onion in butter or oil in a large frying pan. Add the crushed garlic. When it turns golden, add the tomato slices, season with salt and pepper, and continue to cook gently until they are soft, turning the slices once with a spatula.

Break the eggs carefully into a bowl and slip them unbeaten into the frying pan. Cook until set, season if necessary, and serve immediate
