  • 2 medium-sized potatoes
  • 2 tablespoons butter
  • 6 eggs

Method

Peel and boil the potatoes, and mash them to a smooth purée. Mix with about 2 tablespoons butter. Beat the eggs and add them to the potato purée gradually, beating all the time to achieve a smooth texture. Add onions or chives, and season to taste with salt and pepper.
