Fish with Onions and Raisins

A good recipe for sea bass or bream which will do well with other fish too.


  • A fish weighing 1–1½ kg (2–3 lb)

Scale, gut and wash the fish. Slash the skin diagonally in the thicker parts. Soften the onions in 2 tablespoons of the oil with a little salt. Blanch and drain the raisins or sultanas. Rub the fish with the rest of the oil and the seasonings and spices and place it in an oven dish on top of the bun
