  • 1 large roasting chicken
  • 2 tablespoons sunflower oil
  • Juice of ½–1

Method

Wash the chicken and wipe it dry.

In a large saucepan or flameproof casserole put the oil, lemon juice, a coffee cup of water, turmeric, salt and white pepper, and the cardamom pod. Bring to the boil, then place the chicken in the pan. Cover and cook over very low heat, turning the chicken over frequently and adding another coffee cup of water as the juices are absorbed.
