This recipe for leftovers is inspired by the medieval Kitab al Wusla il al Habib. For 3 or 4 people.
Mince or chop the chicken finely. Soak the bread in water, squeeze dry and crumble. Mix the chicken with the crumbled bread, pistachios, oil, lemon juice, and salt and pepper to taste, and knead vigorously. Shape and roll into marble-sized balls.
