This recipe for leftovers is inspired by the medieval Kitab al Wusla il al Habib. For 3 or 4 people.


  • 250 g (8 oz) cooked boned chicken

Mince or chop the chicken finely. Soak the bread in water, squeeze dry and crumble. Mix the chicken with the crumbled bread, pistachios, oil, lemon juice, and salt and pepper to taste, and knead vigorously. Shape and roll into marble-sized balls.

These can either be served as they are, as a cold dish with salad; or they can be rolled in flour and fried, or poached in a chicken soup, and
