Method

The word meshwi in Arabic covers all types of meat, whether large joints or smaller pieces, which are grilled or roasted over a fire. In North Africa, people light small fires in their courtyards and sit around them while a leg or other joint of lamb is turned on a spit, helping themselves to slices of the meat as it becomes d
