Also called shashlik, this is probably the most famous Turkish dish, and it undoubtedly lives up to its reputation. It is said by Turks to have been created during the splendid, conquering era of the Ottoman Empire, when Turkish soldiers, forced to camp out in tents for months on end, discovered the pleasure of eating meat grilled out of doors on open fires of charcoal or dry wood.
