This is an extremely cheap dish. It is exquisite served with vegetables or accompanied by a pyramid of extra stuffing, and a great favourite in our family.

This is one of the Middle Eastern fruit and meat dishes, possibly inspired by ancient Persia. A quince sauce, stewed apples, black cherry jam or cranberry sauce may be substituted for the apricots in this recipe.
