Put the meat through the mincer two or three times if possible. Turn it into a large bowl. Add the ground rice, chopped parsley, onions and garlic (if used). Work to a fine smooth paste by squashing with a wooden spoon and kneading vigorously by hand. If you have a food processor, use it as described above. Season to taste with salt and pepper.
